Olive groves in the Andalusian mountains

In Spain, in the mountain ranges south of the Andalusian city of Cordoba, one of the best olive oils in the world is produced. An olive oil known since ancient times as one of the best in the world for its extraordinary and outstanding quality.

On the steep slopes of these Andalusian mountain ranges, olive trees are cultivated at high elevations. The harvest is done from the air, directly from the branches of the trees even before the olives fall to the ground. This guarantees the maximum quality of the won oil. Thanks to the cold pressing process, the Oleum Hispania Cooperative produces the best extra virgin olive oil (Aceite de Oliva Virgen Extra - AOVE). 

The esteem in which the ancient Romans held this olive oil, produced in what was then Betica, now Andalusia, is evident from Mount Testaccio in Rome. This mountain is formed by about 40 million olive oil amphorae - vessels, which were brought to their home mainly from this area of ancient Roman Hispania.
